Closed on Sundays — untick Sun in Business Days.
Festival closures — add Diwali, Holi or your annual stock-taking days as Holidays so the estimate skips them.
Made-to-order products — a longer Processing Time (e.g. 7). Note that it applies to the whole store; you can't set it per product yet.
Honest promises — showing a date reduces "where is my order?" calls and COD refusals.
